You may know Charlie Papillo from WVMT’s morning show Charlie, Ernie and Lisa, but did you know that Charlie is the pizza guru behind Pizza Papillo? Pizza Papillo is a mobile pizza joint with some seriously tasty pies. Charlie is clearly skilled in the radio game but his love for authentic Italian pizza has catapulted him into a successful business venture that has put Pizza Papillo on the map.
“I’ll give it a shot, let’s try it.” Words from Charlie circa 2010 when he made the decision to create a mobile oven-fired pizzeria. After careful research he purchased a custom Forno Bravo wood fired oven imported from Italy and started building relationships with local Vermont businesses. Charlie being a true Vermonter wanted locally sourced ingredients to accompany his imported Italian San Marzano tomatoes.
“I like to stay true to Italian roots, Neapolitan style pizza.” States Charlie. The perfect pie for Charlie is wood fired with fermented dough, fresh mozzarella, San Marzano tomatoes, and extra virgin olive oil, simple as that. Pizza Papillo also offers specialty pies based on the produce that is in season, the fresh produce being supplied by Sam Mazza’s farmstand, a long standing relationship that Charlie has had since starting the business.
What should you expect from Pizza Papillo? Fresh Vermont produce with REAL melted cheese layered over a delicious San Marzano tomato sauce on top of fermented dough that has been charred to perfection. Charlie puts love into every pizza that he makes and the quality is outstanding. This pizza is seriously tasty and has won a place in the heart of many Vermonters including myself.
Pizza Papillo fires up in May and runs through October. This mobile oven-fired pizzeria can be seen at local events and farms all over Vermont.
